The resulting product is much lighter than cow’s milk because the fat has been removed. It also tastes less sweet because the sugar content is lower. Many people like almond milk because it doesn’t contain lactose, although there are several brands of “lactose-free” almond milk on the market.
Here’s my recipe:
1 cup raw almonds
4 cups of filtered water
Blend almonds and 4 cups of water together in a high-speed blender until smooth. Strain through cheesecloth or a fine mesh sieve to remove any remaining bits of skin or pulp. Add more water as needed until desired consistency is reached. I usually use about 1/2 gallon of water per quart of almond milk.
That’s it! You can refrigerate it in a sealed container for up to 3 days. If you keep it longer than that, the fat starts separating out and it gets cloudy. Just give it a good shake before drinking.
This recipe makes one quart of almond milk.
